Bacon & Coconut Bread & Butter Pudding

This bread pudding is one of my fave dish to eat and make. The sweetness from both the bread and coconut flakes; mixed with the saltiness of the bacon, this meal is a perfect match and fit!

Does the title seem a little too much for you? Well, wait until you try the recipe, it is absolutely delicious! Since I developed this recipe a while ago, I have become so addicted to it. I have made it so many times since. It has quickly become a go to recipe for quick meal. As you may or may not know by now, I love anything coconut! This recipe was created from a craving I had. For the longest time, I wanted to make bread pudding. At the time, I had 2 ideas for the bread pudding; This is the first, the other, I will share on a later day.

This bread pudding can serve any purpose you need it for, from breakfast to lunch to brunch or even dessert. The toppings choices are limitless. I love mine either just as is or with fresh fruits. But there are so many other toppings such as syrup, jam, fruit compote, ice cream, sauce, custard and many more you can enjoy it with.

I purposefully use coconut bread to make my bread pudding because well, I love coconut and why not, right? but also the richness of the coconut bread in the pudding. This recipe will also go great with whichever bread your prefer. The outcome is a complete and filling meal regardless.

The best part is, every component of the bread pudding can be swapped; You don’t have or don’t like coconut bread? Use whatever bread you have. You don’t like or have bacon? Swap for sausage or leave it out entirely. You don’t like or have coconut flakes? Leave it out. You can also add fresh fruits such as 1/2 cup fresh blueberry or raspberry. I have created this recipe in the way so, it is easily adopted by your taste.

Bacon and Coconut Bread & Butter Pudding

This bread pudding can serve as both breakfast and dessert.

  • Baking Pan
  • Spatula or Spoon
  • Bowl
  • Whisk
  • Knife
  • 8 Slice Bread (See Note 1.)
  • 4 Egg
  • 2 Cup Milk
  • ½ Tsp Salt
  • 6 Slice Bacon (Cooked and Chopped (Optional) – See Note 2)
  • 1 Handful Toasted Coconut Flakes (Optional )
  • 2-3 TBSP Sugar (Optional. See Note 3.)
  • Bread (To spread on both sides of the bread)
  1. Preheat oven at 350 degree for 10 mins.

  2. Spread butter on both sides of the bread.



  3. Stack the buttered bread together and cut into small cubes and set aside.



  4. In a bowl, break and whisk the eggs.



  5. Then add the milk and whisk until it is combined.



  6. Then add Salt and bacon and whisk.

    (Add sugar if using any)



  7. Now add the toasted coconut flakes and whisk



  8. The add the cubed buttered bread into the mixture and gently mix with a spatula until the bread is incorporated into the mixture.



  9. Transfer mixture into a lightly greased pan and make sure that it is evenly spread in the pan. (I used an 8 by 8 inches pan)



  10. Allow to soak for about 5-7mins



  11. Bake for 30 to 35mins until the bread / custard sets and pulls away from the edge of the pan and slightly brown.



  12. Enjoy alone or with syrup, fresh fruits, fruit compote, ice-cream, etc

***Note 1: I used coconut bread. You may use whatever kind of bread you have access to and available*** 

***Note 2: You can use sausage instead of bacon if you prefer. Just make sure the sausage is cooked first before adding it into the custard

How to cook bacon in an oven: Preheat the oven at 400 degrees for 10 mins. Arrange the raw bacon in a baking pan, make sure the bacons are not overlapping with each other and bake for 15mins on one side and 10 mins on the other side or until it is cooked to your preference. Make sure to watch the bacon closely so it doesn’t burn*** 

***Note 3: I didn’t use any sugar in my recipe mostly because I don’t like sugary meals but if you need it a bit sweeter, then you may add sugar. You can Skip the sugar and eat it syrup or and fresh fruits***
