Bacon and Coconut Bread & Butter Pudding

This bread pudding can serve as both breakfast and dessert.

Ingredients

  • 8 Slice Bread - Sliced See Note 1.
  • 4 Egg
  • 2 Cup Milk
  • ½ Tsp Salt
  • 6 Slice Bacon Cooked and Chopped (Optional) - See Note 2
  • 1 Handful Toasted Coconut Flakes Optional
  • 2-3 TBSP Sugar Optional. See Note 3.
  • Butter To spread on both sides of the bread

Instructions

  • Preheat oven at 350 degree for 10 mins.
  • Spread butter on both sides of the bread. Repeat until all the slices of bread are buttered on both sides.
  • Stack the buttered bread together and cut into small cubes and set aside.
  • In a bowl, break and whisk the eggs.
  • Then add the milk and whisk until it is combined.
  • Then add Salt and bacon and whisk.
    (Add sugar if using any)
  • Now add the toasted coconut flakes and whisk
  • The add the cubed buttered bread into the mixture and gently mix with a spatula until the bread is incorporated into the mixture.
  • Transfer mixture into a lightly greased pan and make sure that it is evenly spread in the pan. (I used an 8 by 8 inches pan)
  • Allow to soak for about 5-7mins
  • Bake for 30 to 35mins until the bread / custard sets and pulls away from the edge of the pan and slightly brown.
  • Enjoy alone or with syrup, fresh fruits, fruit compote, ice-cream, etc

Notes

***Note 1: I used coconut bread. You may use whatever kind of bread you have access to and available*** 
***Note 2: You can use sausage instead of bacon if you prefer. Just make sure the sausage is cooked first before adding it into the custard
How to cook bacon in an oven: Preheat the oven at 400 degrees for 10 mins. Arrange the raw bacon in a baking pan, make sure the bacons are not overlapping with each other and bake for 15mins on one side and 10 mins on the other side or until it is cooked to your preference. Make sure to watch the bacon closely so it doesn't burn*** 
***Note 3: I didn't use any sugar in my recipe mostly because I don't like sugary meals but if you need it a bit sweeter, then you may add sugar. You can Skip the sugar and eat it syrup or and fresh fruits***
