Oatmeal is probably one of the most flexible ingredients out there.
It can be sweet or savoury. It works for breakfast, dinner, dessert, or even as a topping. Whatever mood you’re in, oatmeal can match it.
What makes oatmeal so special is that it’s a blank canvas. It absorbs the flavours around it and gives you room to get creative. You can keep it simple or dress it up, it’s really up to you.
This savoury oatmeal recipe actually came from my sister. When she first told me about it, she hyped it up quite a bit. But after making it myself, I totally get the excitement. It’s cozy, satisfying, and packed with flavour using just a handful of ingredients.

What Makes This Dish Work
The magic here is in its simplicity. The tomatoes bring a natural umami that shines through with just a pinch of salt. The onions add sweetness and depth. Everything is sautéed lightly to keep the flavours fresh and balanced.
The size of your tomato and onion slices is completely up to you, chunky or finely chopped, it all works. As for the eggs, we usually go with sunny side up because the yolk adds a creamy richness that pairs beautifully with the oatmeal. But if you prefer scrambled or an omelet, go for it. This recipe is easygoing like that.

Seasoning and Spice
Keep things simple: a bit of salt and pepper is all you really need. If you like heat, feel free to add more pepper or even a bit of chili oil or flakes. If you’re more sensitive, pull back. Make it yours.

Savoury Oatmeal with Eggs, Sautéed Tomatoes and Onions
Equipment
- 1 Sauce Pan
- 1 Frying Pan
- 1 Spatula or Frying spoon
Ingredients
For the Oatmeal
- 1 cup Oatmeal
- 2 cups Water
- 1 tbsp Sugar
- A Pinch Salt
For the eggs, Tomato and Onion
- 1-2 tbsp cooking oil
- 2 Eggs
- 1 medium Onion Sliced
- 2 medium size Tomatoes Sliced
- 1-3 tsp Ground Cayenne Pepper Substitute with any pepper of choice
- Salt To Salt
Instructions
- In a medium size pan, add the oatmeal, salt, sugar.

- Add water and stir. Then place in medium low heat and allow to cook.

- Once the oat is cooked and it is to the consistency you want, not too thin and not too thick then remove from heat, transfer into a bowl and set aside.

- In a frying pan, add in the oil and allow to heat up

- Break and add in both eggs then season with salt and pepper (if making scramble egg or omelette, break the eggs into a bowl, add salt / seasoning and whisk before pouring into the oil / pan).

- If the frying pan is big enough then on the other half of the frying pan, add in the sliced tomatoes and onions. Keep an eye on the eggs so they don't over cook. Once the eggs are cooked, remove from the pan transfer to a plate and set aside.If the pan isn't big enough, wait for the eggs to cook then remove it from the pan and transfer into a plate and set aside. Add the tomato and onion into the pan.

- Season the tomato and onion with salt and pepper, stir and allow it to cook.

- Whatever texture you are want, you could let the onion be slightly soften and still have a bit of crunch to it and the tomato tender. You can also cook both the tomato and onion through until they are softened.

- Once the tomato and onion are ready, remove from heat

- Carefully pour the sautéed tomato and onion on top of the cooked oatmeal that you transferred to a bowl

- Then place the fried eggs on top of it
