Savoury Oatmeal with Eggs, Sautéed Tomatoes and Onions

The magic here is in its simplicity. The tomatoes bring a natural umami that shines through with just a pinch of salt. The onions add sweetness and depth. Everything is sautéed lightly to keep the flavours fresh and balanced.

Equipment

  • 1 Sauce Pan
  • 1 Frying Pan
  • 1 Spatula or Frying spoon

Ingredients

For the Oatmeal

  • 1 cup Oatmeal
  • 2 cups Water
  • 1 tbsp Sugar
  • A Pinch Salt

For the eggs, Tomato and Onion

  • 1-2 tbsp cooking oil
  • 2 Eggs
  • 1 medium Onion Sliced
  • 2 medium size Tomatoes Sliced
  • 1-3 tsp Ground Cayenne Pepper Substitute with any pepper of choice
  • Salt To Salt

Instructions

  • In a medium size pan, add the oatmeal, salt, sugar.
  • Add water and stir. Then place in medium low heat and allow to cook.
  • Once the oat is cooked and it is to the consistency you want, not too thin and not too thick then remove from heat, transfer into a bowl and set aside.
  • In a frying pan, add in the oil and allow to heat up
  • Break and add in both eggs then season with salt and pepper (if making scramble egg or omelette, break the eggs into a bowl, add salt / seasoning and whisk before pouring into the oil / pan).
  • If the frying pan is big enough then on the other half of the frying pan, add in the sliced tomatoes and onions. Keep an eye on the eggs so they don't over cook. Once the eggs are cooked, remove from the pan transfer to a plate and set aside.
    If the pan isn't big enough, wait for the eggs to cook then remove it from the pan and transfer into a plate and set aside. Add the tomato and onion into the pan.
  • Season the tomato and onion with salt and pepper, stir and allow it to cook.
  • Whatever texture you are want, you could let the onion be slightly soften and still have a bit of crunch to it and the tomato tender. You can also cook both the tomato and onion through until they are softened.
  • Once the tomato and onion are ready, remove from heat
  • Carefully pour the sautéed tomato and onion on top of the cooked oatmeal that you transferred to a bowl
  • Then place the fried eggs on top of it
  • Enjoy this simple meal delicious meal anytime of the day.

Tip 1: You can make this dish vegan by skipping the eggs entirely.
