Preheat oven at 400 degrees for 10 mins
Add the beans, pepper, onions and water in a blender and blend until it is very smooth.
Then pour in a bowl and whisk in the palm oil, vegetable oil, smoked fish / sardine / corned beef - (If using any), salt and seasoning cube to taste and mix.
Then pour into an oven safe pan (You might need to use 2 pans or muffin cups/pans) then slice the eggs and gently place it on top of the beans mixture and cover with a foil sheet and poke holes in the foil sheet.
Then put that pan (the one with the beans mixture) into a bigger oven safe pan and gently pour hot water into the bigger pan (This method is called water bath), be careful not to pour water into the beans mixture.
Carefully place pan into the oven and bake for 40 - 60 mins or until the beans mixture sets/firms.
Remove from the water bath. It can be served hot or warm.
Moi-Moi can be eaten as a side dish with any kind of rice, with bread, custard, pap, soak garri, etc.
